Tender Roast Pork with Golden Onions and Balsamic Sauce
Ingredients:
For the Pork Roast:
2 to 3 lb boneless pork loin roast
2 tbsp olive oil
2 tsp garlic powder
1 tsp onion powder
1 tsp dried thyme
1 tsp dried rosemary
Salt and pepper, to taste
For the Balsamic Sauce:
1 tbsp olive oil
2 medium onions, sliced thinly
3 tbsp balsamic vinegar
½ cup chicken broth
1 tbsp brown sugar
1 tbsp Dijon mustard
Salt and pepper, to taste
Instructions:
Prepare the Pork Roast:
Preheat your oven to 375°F (190°C).
In a small bowl, mix together garlic powder, onion powder, dried thyme, dried rosemary, salt, and pepper. Rub the pork roast with olive oil and then coat it evenly with the spice mixture.
Sear the Pork Roast:
Heat a large ovenproof skillet over medium-high heat. Add 2 tablespoons of olive oil.
Once the oil is hot, sear the pork roast on all sides until golden brown, about 4-5 minutes per side. Remove the roast from the skillet and set it aside.
Roast the Pork:
Place the seared pork roast on a rack in a roasting pan. Roast in the preheated oven for 45-60 minutes, or until the internal temperature reaches 145°F (63°C) for medium doneness. Let the pork rest for 10 minutes before slicing.
Prepare the Golden Onions and Balsamic Sauce:
While the pork is roasting, prepare the sauce.
In the same skillet that you seared the pork in, add 1 tablespoon of olive oil and sliced onions. Cook over medium heat, stirring occasionally, for about 10-15 minutes until the onions turn golden brown and caramelized.
Add the balsamic vinegar to the onions and cook for another 2 minutes, scraping up any browned bits from the pan.
Stir in the chicken broth, brown sugar, and Dijon mustard. Bring to a simmer and cook for about 5 minutes, allowing the sauce to thicken slightly. Season with salt and pepper to taste.
Serve:
Slice the rested pork roast and serve it with the caramelized onions and balsamic sauce drizzled over the top. This dish pairs beautifully with mashed potatoes or roasted vegetables!
Tips:
You can add some fresh herbs like thyme or rosemary to the sauce for extra flavor.
For an extra touch, top with fresh parsley before serving.
