Quick Sticky Toffee Puddings
Ingredients:
1 cup boiling water
1 tsp baking soda
1/2 cup unsalted butter, softened
1/2 cup packed brown sugar
2 large eggs
1 tsp vanilla extract
1 cup all-purpose flour
Pinch of salt
Toffee Sauce (optional):
1/2 cup butter
1/2 cup brown sugar
1/4 cup heavy cream
Instructions:
Preheat oven to 350°F (175°C). Grease and flour 6 ramekins.
Pour boiling water over chopped dates and stir in baking soda. Let stand for 5 minutes.
In a separate bowl, cream together butter and brown sugar until light and fluffy. Beat in eggs one at a time, then stir in vanilla.
Gradually add flour and salt to the butter mixture, mixing until just combined.
Stir in the date mixture.
Pour batter into prepared ramekins, filling about 2/3 full.
Bake for 20-25 minutes, or until a toothpick inserted into the center comes out clean.
Toffee Sauce (optional): While puddings are baking, melt butter and brown sugar in a saucepan over medium heat. Bring to a boil, stirring constantly, then reduce heat and simmer for 2-3 minutes. Stir in heavy cream.
Let puddings cool slightly before drizzling with toffee sauce and serving warm.
