Berry Strawberry Crunch Cheesecake
Ingredients:
For the Crust:
2 cups crushed Golden Oreos (or vanilla wafers)
5 tbsp unsalted butter, melted
For the Cheesecake Filling:
3 (8 oz) packages cream cheese, softened
1 cup granulated sugar
3 large eggs
1 tsp vanilla extract
½ cup sour cream
2 tbsp all-purpose flour
For the Strawberry Crunch Topping:
1 ½ cups crushed Golden Oreos
½ cup freeze-dried strawberries, crushed
4 tbsp unsalted butter, melted
For the Strawberry Topping:
1 ½ cups fresh strawberries, diced
¼ cup granulated sugar
1 tbsp cornstarch mixed with 2 tbsp water
Instructions:
1. Prepare the Crust:
Preheat oven to 325°F (163°C). Grease a 9-inch springform pan.
In a bowl, mix crushed Golden Oreos with melted butter until well combined.
Press the mixture firmly into the bottom of the pan. Bake for 10 minutes, then set aside to cool.
2. Make the Cheesecake Filling:
In a large bowl, beat cream cheese and sugar until smooth.
Add eggs one at a time, mixing after each addition.
Mix in vanilla extract, sour cream, and flour until just combined.
Pour the filling over the crust and smooth the top.
3. Bake the Cheesecake:
Wrap the bottom of the pan in aluminum foil and place in a larger baking dish.
Fill the dish with hot water until it reaches halfway up the springform pan.
Bake for 55-65 minutes, or until the center is slightly jiggly but set around the edges.
Turn off the oven and leave the cheesecake inside with the door slightly open for 1 hour.
Remove and refrigerate for at least 4 hours or overnight.
4. Prepare the Strawberry Crunch Topping:
In a bowl, mix crushed Golden Oreos, crushed freeze-dried strawberries, and melted butter.
Stir until combined and crumbly. Set aside.
5. Make the Strawberry Topping:
In a saucepan, combine strawberries and sugar over medium heat.
Stir and cook until strawberries release their juices.
Add the cornstarch mixture and cook until thickened, about 3 minutes. Let cool.
6. Assemble the Cheesecake:
Spread the strawberry topping evenly over the chilled cheesecake.
Sprinkle the strawberry crunch topping generously on top.
Garnish with whipped cream and fresh strawberries, if desired.
