Tiramisu Cupcakes Recipe
Ingredients
For the Cupcakes:
1 ¼ cups (160g) all-purpose flour
1 ½ tsp baking powder
¼ tsp salt
½ cup (115g) unsalted butter, softened
¾ cup (150g) granulated sugar
2 large eggs
1 ½ tsp vanilla extract
½ cup (120ml) whole milk
For the Coffee Syrup:
½ cup (120ml) strong brewed espresso or coffee
2 tbsp sugar
2 tbsp coffee liqueur (optional)
For the Mascarpone Frosting:
8 oz (225g) mascarpone cheese, chilled
1 cup (240ml) heavy whipping cream, cold
½ cup (60g) powdered sugar
1 tsp vanilla extract
For Topping:
Cocoa powder, for dusting
Chocolate shavings (optional)
Instructions
1. Make the Cupcakes:
Preheat oven to 350°F (175°C). Line a muffin tin with cupcake liners.
In a bowl, whisk together flour, baking powder, and salt. Set aside.
In another bowl, beat butter and sugar until light and fluffy (about 2-3 minutes).
Add eggs one at a time, mixing well after each addition. Stir in vanilla extract.
Gradually add the dry ingredients, alternating with milk, mixing until just combined.
Divide batter evenly among cupcake liners, filling each about 2/3 full.
Bake for 18-20 minutes or until a toothpick inserted in the center comes out clean. Let cool completely.
2. Make the Coffee Syrup:
In a small saucepan, heat espresso and sugar over low heat until sugar dissolves.
Remove from heat and stir in coffee liqueur (if using). Let cool.
3. Make the Mascarpone Frosting:
In a bowl, beat mascarpone cheese, powdered sugar, and vanilla until smooth.
In a separate bowl, whip heavy cream until stiff peaks form.
Gently fold the whipped cream into the mascarpone mixture until smooth and creamy.
4. Assemble the Cupcakes:
Use a fork or skewer to poke small holes on the top of each cupcake.
Spoon or brush coffee syrup over the cupcakes to soak them lightly.
Pipe or spread mascarpone frosting over each cupcake.
Dust with cocoa powder and top with chocolate shavings if desired.
