Alfredo Lasagna Soup
Ingredients:
For the Soup:

1 tbsp olive oil
1 onion, diced
2 cloves garlic, minced
1 lb ground Italian sausage (or ground beef)
1 can (14.5 oz) diced tomatoes
4 cups chicken broth
1 tsp dried basil
1 tsp dried oregano
1 tsp crushed red pepper flakes (optional, for heat)
8-10 lasagna noodles, broken into pieces
1 ½ cups heavy cream
Salt and pepper, to taste
For the Alfredo Sauce:

4 tbsp butter
2 cloves garlic, minced
1 cup heavy cream
1 ½ cups grated Parmesan cheese
½ cup shredded mozzarella cheese
Salt and pepper, to taste
For Garnish:

Fresh basil or parsley, chopped
Additional grated Parmesan cheese
Instructions:
Cook the Ground Meat:
In a large pot, heat the olive oil over medium heat. Add the diced onion and minced garlic. Cook for 3 minutes, until softened and fragrant.
Add the ground sausage (or beef) to the pot. Cook until browned, breaking it apart with a spoon as it cooks. If there’s excess fat, drain it off.

Prepare the Soup Base:
Add the diced tomatoes (with juice), chicken broth, basil, oregano, and red pepper flakes (if using) to the pot. Stir everything together.
Bring the mixture to a boil, then reduce the heat and simmer for 10 minutes.

Cook the Noodles:
Break the lasagna noodles into 2-3 inch pieces and add them to the soup. Simmer for 10-12 minutes, or until the noodles are tender, stirring occasionally.

Make the Alfredo Sauce:
While the soup is simmering, melt the butter in a separate saucepan over medium heat. Add the minced garlic and cook for 1 minute until fragrant.
Stir in the heavy cream and bring to a simmer. Let it cook for 3-4 minutes until slightly thickened.
Add the Parmesan and mozzarella cheeses, stirring until the sauce is smooth and creamy. Season with salt and pepper to taste.

Combine the Alfredo Sauce with the Soup:
Once the noodles are tender, stir in the prepared Alfredo sauce. Gently mix everything together, allowing it to heat through for another 2-3 minutes. Taste and adjust the seasoning if needed.

Serve:
Ladle the soup into bowls and garnish with fresh basil or parsley and additional grated Parmesan cheese. Serve with crusty bread for a complete meal
