Sweet Potato & Spinach Bake
Ingredients:
2 large sweet potatoes, peeled and sliced thin
3 cups fresh spinach
1 cup shredded mozzarella cheese
½ cup ricotta cheese
2 eggs
½ cup milk
½ tsp salt
¼ tsp black pepper
½ tsp garlic powder
Instructions:
Preheat oven to 375°F (190°C). Grease a baking dish.
Arrange a layer of sweet potato slices at the bottom.
Spread half the spinach and half the mozzarella cheese over the sweet potatoes.
Repeat with another layer of sweet potatoes, spinach, and cheese.
In a bowl, whisk eggs, milk, salt, pepper, and garlic powder. Pour over the layers.
Dollop ricotta cheese on top and bake for 35-40 minutes until golden and set.
