Avocado,Mozzarella and Tomatoe Salad served on toast

 

 

Ingredients

•2 ripe avocados, diced

•1 cup cherry tomatoes, halved

•8 oz fresh mozzarella balls (or diced)

•2 tbsp fresh basil, chopped

•2 tbsp extra virgin olive oil

•1 tbsp balsamic vinegar

•1 tsp lemon juice

•½ tsp salt

•¼ tsp black pepper

•Optional: ½ tsp Italian seasoning

 Instructions

 Prepare the ingredients – Dice the avocado, halve the cherry tomatoes, and cut the mozzarella into bite-sized pieces if needed.

 Make the dressing – In a small bowl, whisk together the olive oil, balsamic vinegar, lemon juice, salt, and pepper.

 Assemble the salad – In a mixing bowl, gently combine the avocado, tomatoes, mozzarella, and basil.

 Dress and serve – Drizzle the dressing over the salad, toss gently, and serve immediately. Enjoy fresh!

 Notes

•For extra flavor, sprinkle with red pepper flakes or a drizzle of honey.

•Serve with toasted bread or as a topping for grilled chicken.

•Best eaten fresh, but leftovers can be stored for up to 1 day in an airtight container.
