No-Bake Blueberry Swirl Cheesecake

Ingredients:
• 1 ½ cups graham cracker crumbs
• ½ cup melted butter
• 2 tbsp sugar
• 16 oz cream cheese, softened
• 1 cup heavy cream
• ¾ cup powdered sugar
• 1 tsp vanilla extract
• ½ cup blueberry puree (blended fresh or frozen blueberries)
• ½ cup fresh blueberries (for topping)

Instructions:
1. Prepare the crust: Mix graham cracker crumbs, melted butter, and sugar. Press into a springform pan and refrigerate for 15 minutes.
2. Make the filling: Beat cream cheese, powdered sugar, and vanilla until smooth. In a separate bowl, whip heavy cream until stiff peaks form, then fold into the cream cheese mixture.
3. Create the swirl effect: Pour the cheesecake mixture over the crust. Add spoonfuls of blueberry puree and use a toothpick to create swirls.
4. Chill: Refrigerate for at least 4 hours, or until set.

Tiramisu in a Glass 
Ingredients:
1. Ladyfingers (or soft cookies).
2. Freshly brewed coffee (can be decaf).
3. Mascarpone cheese.
4. Cocoa powder.

Preparation:
1. Prepare the base: Lightly dip the ladyfingers in the coffee and place them at the bottom of the glass.
2. Mix the cream: Whip the mascarpone until smooth and creamy. You can add a touch of sugar if desired (optional).
3. Layer it up: Alternate layers of soaked ladyfingers and mascarpone, starting with the ladyfingers and ending with a mascarpone layer.
4. Add the finishing touch: Dust the top with cocoa powder for the classic tiramisu look.

Chill in the fridge for at least an hour to let the flavors blend

Chocolate Pie

Ingredients:
½ c. cocoa
¼ cup cornstarch
3 egg yolks
1 ½ c. sugar
¼ tsp. salt
2 c. milk
1 tsp. vanilla
Directions:
This recipe does not have meringue on it. You could make the meringue if you want.
Step1: Mix cocoa, cornstarch, beaten egg yolks; sugar and salt and vanilla, then add milk gradually, while stirring in a pot over med-high heat. Cook until thick, beating it smooth.
Step2: Pour into a pre-baked pie shell.
Step3: Put in the fridge to chill.

Dreamsicle Trifle

2 large cans mandarin oranges
1 small pkg. orange gelatin
1 pint orange sherbet
1 cup whip cream
1 angel food cake, cubed
Drain 1 cup liquid from mandarin oranges.
Bring the liquid to a boil in the microwave. Add gelatin, and stir to dissolve. Cool until just warm. Add orange sherbet, and mix until melted. Gently fold in whipped cream.
Add one half of the cake cubes in the trifle dish in a tight layer. Add the orange mixture over the top of the cake cubes.
Add a thin layer of whipped topping. Add a layer of mandarin oranges.
Repeat the process. Refrigerate at least 2 hours before serving.
Bonus Garnish Tip:
For attractive orange curls, use strips of orange peel. 

Easy No Bake Peanut Butter Bars

Easy No Bake Peanut Butter Bars

Ingredients
1 cup butter melted
2 cups graham cracker crumbs (use the boxed kind, or grind them in a food processor. Tiny granules.)
2 cups confectioners’ sugar (aka powdered sugar)
1 cup + 4 tablespoons peanut butter
1 1/2 cups milk chocolate chips
Directions
In a medium bowl, mix together the melted butter, graham cracker crumbs, confectioners’ sugar, and 1 cup peanut butter until well blended. Press evenly into the bottom of an ungreased 9×13 inch pan. (I did mine in a 9X9 square pan because I wanted them thicker) In the microwave, melt the chocolate chips with the peanut butter, stirring every 30 seconds until melted until smooth. Spread over the peanut butter layer. Refrigerate for at least one hour before cutting into squares.
