Homemade Coonballs

2 lb. Jimmy Dean Hot Sausage
4c Bisquick
3c shredded cheese (I used a 4 cheese Mexican Blend)
1 block softened cream cheese
3Tbs green onions or chives
1/2c milk (you may need a Little more)
1tsp onion powder
1tsp garlic powder
1tsp Lawry's seasoned salt ( I substitute Cajun seasoning)
Place all of the ingredients in a large mixing bowl and stir very well until a uniformed dough forms, spoon into small balls (I use 2 tea spoons) and place on well greased cookie sheets, Bake at 350° about 18-20min. or until balls brown on top

Crustless Pizza Bake

1 jar RAO’s marinara
3 cups mozzarella cheese
1 lb. Ground Italian sausage – or meat combo of choice
1 green pepper chopped
Mushrooms
Onions
Basically use the toppings of your choice.
Pour 1/2 cup marinara in the bottom of a 9×13 baking dish.
Mix all toppings in a bowl with 1 cup Mozzarella and 1 cup marinara.
Pour topping mixture into pan.
Top with the last 2 cups of mozzarella.
Bake at 400 for 20 minutes.
Broil for an additional 3-5 minutes if desired.

Hamburger Soup

1 pound lean hamburger meat
3 medium onions(chopped)
1 large diced can tomatoes
2 stalks celery(sliced)
2 bags frozen mixed veg.
2 tbsp Worcestershire sauce
1 large container beef broth
fresh basil, parsley, garlic
1 tbsp Italian seasoning
salt&pepper
Sauté ground beef with onions until brown. If you are using a pressure cooker set it on browning button.Put all your ingredients in the pot. Cooking on the stove will take 1 hr. Simmering. Using the pressure cooker set it on soup button.Which should be 16 min.
I put grated Italian cheese on top. It’s delicious

Nacho Fries

2 pound bag of Walmart brand seasoned fries                                                                                                                                                                                                            1 pound of hamburger meat seasoned with taco seasoning and cheese.                                                                                                                                                              Cook the fries and then add the browned meat and cheese and cook until cheese is melted.

Crispy Cheddar Chicken

Crispy Cheddar Chicken

2 lbs chicken tenders or 4 large chicken breasts
2 sleeves Ritz crackers
1/4 teaspoons salt
1/8 teaspoon pepper
1/2 cup whole milk
3 cups cheddar cheese, grated
1 teaspoon dried parsley
Sauce:
1 10 ounce can cream of chicken soup
2 tablespoon sour cream
2 tablespoon butter
Crush crackers. If using chicken breasts and not tenders, cut each chicken breast into 3 large pieces. Pour the milk, cheese and cracker crumbs into 3 separate small pans. Toss the salt and pepper into the cracker crumbs and stir the mixture around to combine. Dip each piece of chicken into the milk and then the cheese. Press the cheese into the chicken with your fingers. Then press the cheesy coated chicken into the cracker crumbs and press it in.
Spray a 9×13 pan with cooking spray and lay the chicken inside the pan. Sprinkle the dried parsley over the chicken. Cover the pan with tin foil and bake at 400 degrees for 35 minutes. Remove the tin foil, bake for an additional 10-15 minutes, or until the edges of the chicken are golden brown and crispy.
In a medium sized sauce pan combine the cream of chicken soup, sour cream and butter with a whisk. Stir it over medium high heat until the sauce is nice and hot. Serve over the chicken
