POTATO PANCAKES

 

Ingredients :
4 medium potatoes
1 cup grated cheese (you can use mozzarella, cheddar or whatever else you like)
1/4 cup chopped fresh parsley
1 egg
1/4 cup flour (can be wheat flour or buckwheat)
Salt and pepper to taste
Oil for frying
Preparation:
1. Peel the potatoes and cut them into big chunks.
2. Place them in a saucepan of salted water and simmer until tender, about 20 minutes.
3. Listen to them and let them cool down a bit.
4. In a large bowl, mash the potatoes with a fork or mash until they are mashed. It is not necessary for it to be completely smooth; a few small pieces are suitable for texture.
5. Add grated cheese, chopped parsley, egg and flour to the mashed potatoes.
6. Mix all the ingredients well until well incorporated.
7. Season with salt and black pepper to your liking.
8. Using clean hands, remove portions of the potato mixture and form golf ball-sized balls.
9. Flatten the balls slightly to give them the shape of a crepe.
10. Heat a large skillet over medium-high heat and add enough oil to cover the bottom.
11. Place the patties in a hot skillet and fry until golden brown and crispy on both sides, about 3-4 minutes on each side.
12. Remove the pancakes from the pan and place them on absorbent paper to remove excess oil.
13. Serve warm Cheesy Parsley Potato Pancakes, accompanied by a fresh salad or as a side of your main course.
