For the Chicken:
2 large boneless, skinless chicken breasts, sliced into strips
1 tablespoon Cajun seasoning (adjust to taste)
1/2 teaspoon garlic powder
1/2 teaspoon paprika
2 tablespoons olive oil
For the Pasta:
12 ounces penne pasta
3 cups chicken broth
1 cup heavy cream
1 cup shredded Parmesan cheese
1/2 cup diced sun-dried tomatoes (optional)
1 teaspoon Cajun seasoning
1 teaspoon garlic powder
1/2 teaspoon onion powder
Salt and pepper to taste
Fresh parsley, chopped (for garnish)
Instructions
1. Season and Cook the Chicken:
In a small bowl, mix Cajun seasoning, garlic powder, and paprika.
Rub the spice mixture onto the chicken strips, ensuring an even coating.
Heat olive oil in a large skillet over medium-high heat. Add the chicken and cook for 4–5 minutes per side, or until golden brown and cooked through. Remove from the skillet and set aside.
2. Cook the Pasta:
In the same skillet, add the uncooked penne pasta, chicken broth, and heavy cream. Stir well to combine.
Bring the mixture to a boil, then reduce the heat to medium-low. Cover and let it simmer for 10–12 minutes, stirring occasionally, until the pasta is tender.
3. Add the Flavors:
Stir in the Parmesan cheese, sun-dried tomatoes (if using), Cajun seasoning, garlic powder, and onion powder. Mix until the cheese melts and the sauce is smooth.
Season with salt and pepper to taste.
4. Combine the Chicken and Pasta:
Slice the cooked chicken into bite-sized pieces and add it back to the skillet.
Toss everything together to coat the chicken and pasta in the creamy sauce.
5. Serve:
Garnish with freshly chopped parsley and an extra sprinkle of Parmesan cheese. Serve hot and enjoy!
Tip:
For extra heat, add a pinch of cayenne pepper or crushed red pepper flakes to the sauce. Serve with garlic bread for a complete meal!
